Whitebait are tiny little school fish that are commonly between 25-50 mm long. They are actually the juveniles of several different species caught off Western Australia and sold frozen in one kilo packs. They are eaten whole - head, fins, bones and innards and are highly nutritious. Most commonly prepared dusted in flour and fried in a shallow pan until crunchy then served with a squeeze of lemon and aioli.
