Recipe: Homemade Prawn and Prosciutto Pizza

There’s nothing quiet like homemade pizza. It can be as complex or as simple as you like. Treat this month’s recipe as a point of inspiration - the base, sauce and topping combinations can be endless. We’ve got tried and tested store bought pizza base ideas, and for those with a little extra time, we’ve also included how to make pizza dough from scratch!

Prawn and prosciutto pizza

Ingredients:

  • 10 uncooked (green) king prawns, peeled, deveined, with tails on
  • 100g prosciutto
  • 1 tsp chilli flakes or 1 fresh red chilli, chopped finely
  • 2 cloves garlic, crushed
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 tbs extra virgin olive oil
  • ½ cup tomato pasta sauce
  • 200g mixed cherry tomatoes, halved
  • 1 cup mozzarella cheese, grated
  • handful baby rocket

Method:

  1. Preheat oven to 240°C. Lightly oil a large oven tray.
  2. Place prawns in a large bowl. Combine chilli, garlic, zest and oil. Season to taste.
  3. Place your base on the oven tray and spread with pizza sauce. Layer prosciutto, and then top with seafood mixture and tomatoes. Bake for 15 minutes. Green prawns will go from translucent to white.
  4. Remove pizza from oven and add layer of cheese. Bake for another 5 minutes or until cheese is melted.
  5. Place rocket and lemon juice in a small bowl. Toss gently to coat. Season to taste. Add to top of pizza.
Green Prawns
At Dawson’s we have a number of options for green prawns. We stock shell on green king prawns sold by weight. We also sell packs of shelled green banana prawns and king prawns with either the tail on or off. Prefect to keep in the freezer for pizza nights or seafood pastas.

Pizza Bases
Here are some store bought options we love.
Lebanese bread: Found at most supermarkets. The perfect base if you like them thin and crispy. You can get 6 pizza bases for around $3.50. Lightly toast in oven prior to saucing the base. Less is more with these bases in terms of toppings.
Pitta bread or pockets: A good one for the kids. Mini pitta breads come in a few forms, either thin, similar to Lebanese bread, or thicker ones (Mission brand). Both are great for mini pizzas! The thinner the bread, the less toppings needed.
Stone Baked Pizza Bases from Coles – A crowd pleaser and good all round pizza base. You can load toppings on these bases without them going soggy. Follow instructions on the packet for best results.

Pizza Sauce
If you’re time poor, you can’t go wrong with a store bought tomato pasta sauce. There are also plenty of pizza sauce versions, and we also love tomato paste as an option.
If you’re wanting to play around with some flavour, try pesto as a sauce base. We love to add more crushed garlic and parsley to ours.
For a relatively easy homemade pizza sauce, put the below ingredients into a nutri-bullet or blender. Any unused sauce freezes well!
  • 1 x tin crushed tomatoes
  • 1 tbs tomato paste
  • 1 tbs pesto
  • ¼ red onion
  • 1 clove garlic
  • Salt and pepper

Homemade Pizza Dough

Ingredients:

  • 2¼ cups (335g) bread flour or plain flour
  • 2 tsp (7g) dried yeast
  • 1½ tsp caster sugar
  • 1½ tsp fine table salt
  • 1½ tsp extra virgin olive oil
  • ¾ cup (180ml) warm water

 Method:

  1. To prepare the pizza dough, start by combining the flour, yeast, sugar, and salt in a large mixing bowl.
  2. Create a well in the centre and pour in the olive oil. Gradually add warm water while stirring until a soft dough forms.
  3. Transfer the dough to a floured surface and knead it for about 10 minutes until it becomes smooth and elastic.
  4. Place the dough in a large oiled bowl, cover it, and let it rest in a warm place for about an hour until it doubles in size.
  5. Once risen, return the dough to a floured surface and knead it again until smooth. Stretch to fit a 14-inch pizza pan or similar
