Our wild caught Marlin comes from Ulladulla and has a medium flavour, medium-high oiliness and dry, firm flesh with large flakes. Overcooked it quickly becomes dry, so it’s best cooked medium rare, similar to tuna. Pan fried or grilled, it goes well with Mediterranean or Asian flavours or wrap it in foil or banana leaves to bake or barbeque.
Your Marlin Steaks from Dawson's Oyster Supplies come with the skin off and are boneless. Priced per steak, each steak is a minimum of 200g.
