The high content of O-toro and Chu-toro fatty meat, characterized by a pale hue, along with the rich red Akami, make for delectable eating.
The fish are wild caught in the Great Australian Bight before being very slowly towed back to the pristine waters of Port Lincoln. MORI TUNA are then farmed in large sea cages, safeguarding the fish from potential parasites that could compromise the integrity of their flesh.
