Flathead or Dusky Flathead is one of our favourites. Our commercially caught fillets from Tuggerah Lake have the skin on and the bones in to keep the prices down. Bones are easy to remove after cooking.
This is a very versatile fish that can be marinated, poached, steamed, grilled or fried. When very fresh, it can be eaten raw or marinated in a ceviche style.
