The Green Sambal is inspired by the mamak stalls of Malaysia, with curry leaves fried until aromatic, then blended with fresh coriander, green chillies and onions. Spiced with black pepper, cumin and mustard seeds, it delivers a bright, punchy heat and plenty of depth.
Use it as a marinade for fish or lamb on the BBQ, stirred through a beef curry with a splash of coconut milk, or over roasted veggies. It’s a quick way to bring street-food flavour to your weeknight cooking. Winner of a silver medal at the Melbourne Royal Food Awards.
