Recipe: Easy and Delicious Canned Tuna Pasta

Ingredients
200g spaghetti, or pasta of your choice
2 x 120g cans Good Fish tuna in brine, drained
2 tbsp olive oil
2 cloves garlic, finely minced
½ tsp chilli flakes
2 tsp baby capers
1 tbsp parsley, finely chopped
1 tbsp dill, finely chopped
1 cup rocket
Zest of 1 lemon
Juice of 1 lemon
½ cup parmesan cheese, finely grated
Salt and pepper, to taste
1 tbsp cooking salt (for pasta water)
Method

Bring 3 litres of water to the boil with 1 tbsp salt. Cook pasta according to packet instructions.

While pasta is cooking, heat olive oil over medium heat. Add garlic, chilli flakes, capers and lemon zest and cook for 1 minute until fragrant.

Reserve 1/4 cup of pasta cooking water, then drain pasta.

Add pasta to your sauce along with the pasta water. Toss for 2 minutes to coat.

Turn off the heat. Add tuna, parsley, dill and lemon juice. Season with salt and pepper, and gently toss.

Serve immediately with parmesan cheese and fresh rocket on top.
